BERBERE MUSHROOMS
2 tablespoons vegetable oil
Mushrooms
pepper, to taste
2 medium red onions, finely minced
4 cloves garlic, sliced
1 tablespoon ginger, minced
1 tablespoon paprika
1 teaspoon cayenne
½ teaspoon ground fenugreek
¼ teaspoon ground nutmeg
½ teaspoon ground cardamom
¼ teaspoon ground cloves
¼ teaspoon ground cinnamon
¼ teaspoon allspice
2 tablespoons tomato paste
1 cups vegetable broth
JEWELED VEGETABLE PILAU
2 medium red onions, sliced
½ green cabbage, core removed and shredded
2 cups (220 g) shredded carrot
4 cloves garlic, minced
1 tablespoon grated ginger
salt, to taste
black pepper, to taste
1 tablespoon ground cumin
1 tablespoon curry powder
1 teaspoon ground cardamom
2 cups (460 g) basmati rice
3 cups (720 mL) water
1 bay leaf
1 cinnamon stick
1 star anise
2 scallions, sliced
½ cup (65 g) cashews
¼ cup (45 g) pomegranate seeds
