Indo Chinese Cuisine – Vegetarian American Chopsuey Recipe

A crispy noodle and yummy sauce combination!

The usual American Chop suey is an American pasta dish and consists of elbow macaroni and bits of cooked ground beef with sautéed onions and green peppers in a thick tomato-based sauce. The recipe described in the video uses noodles as a base and is far more crunchier and tastier than the normal dish. Also, we have replaced the beef with vegetables to make a very tasty and innovative vegetarian chopsuey.

Vegetarian American Chopsuey Recipe

Ingredients:

200 gms noodles
1 diced onion
1 carrot
8-10 French beans
½ capsicum
Bunch Spring onions
2 tbsp Oil
Salt
½ cup of Tomato Sauce
½ tbsp Aginomoto powder /Chinese Salt
2-3 baby corns sliced
1 tbsp chilli sauce
1 tbsp vinegar
½ tbsp soya sauce
Few Crushed Garlic cloves
1 tsp sugar
1 tsp Corn starch

Description:

1. Heat 2 cups of water, add 1 tsp of salt and one tablespoon of oil and bring to a boil. Add noodles and boil on high heat until almost cooked. Remove, drain and add cold water to noodles and drain them immediately. Add corn flour to the cooked noodles and coat noodles. Divide the corn coated noodles into four equal portions, form into a nest and deep fry in hot oil till light brown and crisp. Remove and drain on an absorbent kitchen towel.
2. Arrange a portion of the fried noodles on a serving plate and keep it aside.
3. Lets prepare a sauce. Add ½ cup of tomato sauce, 1tbs chilli sauce, 1tbs sugar, 1tbs vinegar, 1/2 tsp soya sauce, 1tbs salt, 1tbs corn flour, 1 cup of water to a bowl and mix add crushed garlic to it and bring it to boil. Keep stirring till the sauce becomes thick. Set aside.
4. Heat oil in a large wok, once the oil is hot, add the onions, carrots, French beans and sauté on high for 2 minutes. Add ½ tsp of Salt, ½ tsp of aginomoto and sauté them. Add spring onions and sauté them for another 2 minutes. Remove all veggies from heat and add them to the boiling sauce and continue boiling for 5 minutes.
5. To serve, place the fried noodles on a serving plate. Ladle the vegetables along with the sauce over the bed of fried noodles. Serve warm.
