Falafel Burger
2 cans garbanzo beans/chickpeas, rinsed and drained
½ red onion, chopped
1-2 cloves garlic, minced
1 lemon, juiced and zested
1 handful parsley
1 tsp cumin
½ tsp coriander
salt and pepper
½ cup breadcrumbs or oats
1 egg (replace with flax egg for vegan)
1 tbsp olive oil
Combine all of the ingredients in a food processor. Gently pulse until all of the ingredients are combine and look like coarse crumbs. Don’t over mix or you’ll end up with hummus.
Form the mixture into 4 patties. Brush each side with olive oil and then place the patties in the refrigerator or freezer for 15-20 minutes before grilling.
Grill over medium-high heat for 3-4 minutes per side or until grill marks develop and the burgers are heated through.
Serve with tomato, onion and tzatziki sauce.
