Easy Vegetarian Lasagna.
Simple, easy no hassle recipe.
Ingredients:
1 – 16oz package lasagna noodles
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1 large handful fresh spinach
3 small sweet peppers
1 small sliced zucchini
3 cups pasta sauce with basil and garlic
1/2 chopped onion
1 or 2 large mushroom
1 cup ricotta cheese
1/2 cup shredded Parmesan cheese

Saute the vegetables.
Add the sauce
simmer 15 minutes
Cook the noodles Al Dente.
Layer the noodles, ricotta, sauce and cheese in a 8×11 glass baking pan.
Cover and bake for 1/2 hour at 350 degrees.
Uncover and cook for additional 15 minutes to crust the top.
