Aloo Palak curry is a delicious vegetarian curry with boiled potatoes in a green, smooth, creamy and spicy spinach gravy. Serve with your favorite breads/noodles/pasta/rice !!!

Ingredients for Aloo Palak Curry:
Spinach – Roughly chopped, 3 cups;
Potatoes – Boiled and cubed, 2 cups;
Onions – diced, 1 cup;
Garlic – chopped, 1 tbsp;
Ginger – chopped, ½ tbsp;
Green chillies – 3 or 4;
Curry leaves – 6-8 no.;
Coriander leaves/cilantro – ½ cup;
Spices – 1½ tsp cumin seeds, 5 cloves, ½ inch stick of cinnamon, 2 bay leaves, 1 tsp each of cumin powder, turmeric powder, coriander powder and garam masala powder, ½ tsp chilli powder;
Plain yogurt (or cream/cashew paste) – 2 tbsp;
Lemon juice – 1 tsp;
Dried fenugreek leaves/kasoori methi – 1tsp (optional);
Salt to taste;
Cooking oil – 3 to 4 tbsp.
