Easy salad recipe and a great BBQ recipe side dish. For a vegetarian recipe replace prosciutto with grilled halloumi cheese.

Toast pine nuts in a frying pan over medium heat until golden. Cool. Slice the peaches into wedges. In a large mixing bowl bring together the rocket, parsley, basil, peach and pine nuts. Season. Dress with the extra virgin olive oil and the balsamic toss to combine. Arrange the ingredients on a large serving platter and prosciutto snuggled into the leaves. Drizzle with extra oil. Serve.

Ingredients:
2 tablespoons Woolworths Select pine nuts
4 fresh peaches, halved, stone removed
120g bag fresh baby rocket leaves
1 cup fresh continental parsley leaves
1 cup fresh basil leaves
2-3 tablespoons Woolworths Select Australian extra virgin olive oil, plus extra to serve
1 tablespoon Woolworths Select balsamic vinegar
16 thin slices prosciutto
Directions:

2. In a large mixing bowl bring together the rocket, parsley, basil, peach and pine nuts. Season. Dress with the extra virgin olive oil and the balsamic and very carefully toss the ingredients in the bowl.
3. Arrange the ingredients on a large serving platter and prosciutto snuggled into the leaves.
4. Drizzle with extra oil. Serve.
Tip1: The peaches can be replaced with nectarines or rockmelon
Tip2: For a portable salad, combine the oil and vinegar in a jar and dress salad at the last minute
Tip3: For a vegetarian option replace the prosciutto with grilled halloumi cheese
