How to make Russian Olivier salad – Russian Potato Salad Recipe. Super easy salad to make,very tasty, very popular everywhere in Eastern Europe and Russia. It keeps well in a fridge up to 3 days.
All the components of the salad mingle and meld to create a hearty, comforting salad. Olivier salad (Салат Оливье) is a traditional salad dish. In many Russian communities, the salad has become one of the main courses served during Christmas and New Year celebrations. You can eat it for breakfast, for lunch or dinner. It is very filling, as a kid i used to love this salad! It is perfect at dinner parties as well on some toasted rye bread. If you want to make it vegetarian just exclude the sausage. This recipe serves around 10 -12 people.

For the Russian Olivier Salad you will need:
6-7 pickled gherkins or pickles
Pork sausage ( you can use thicker ham as well, about 300 gr )
4 medium potatoes
3 large carrots
3 eggs
1 can of green peas ( about 125 gr)
Salt & Pepper
Mayonnaise
To make this Russian salad you need to do the following:
Step 1: Chop your carrots and potatoes into small cubes of similar size.
Step 2: Place your carrots to boil first, after 5-10 min place the potatoes in to boil. Boil your eggs for 10 min in a separate pan..
Step 3: Cut your gherkins, pork sausage and boiled eggs into cubes.
Step 4: Mix all the ingredients together with mayonnaise, salt and pepper.
Step 5: Serve on a plate with some toasted rye bread and dill. Enjoy!
