An easy salad recipe and great side dish recipe to accompany any BBQ recipe. Add flaked hot smoked salmon to this recipe.

Place potatoes in a large saucepan of cold water. Bring to boil, boil for 10 minutes or until tender. Drain. Press down on potatoes to flatten slightly. Combine crème fraiche, lemon rind, juice and capers in a large bowl. Season to taste. Add potatoes, radish, parsley and rocket. Toss to coat. Drizzle with oil and squeeze over lemon.

Ingredients:
500g small baby Cream Delight potatoes
1kg small baby Red Delight potatoes
200ml tub crème fraiche
1 lemon, rind finely grated, juiced
1 tablespoon drained baby capers
1 bunch radish, scrubbed, thinly sliced
½ cup coarsely chopped fresh continental parsley
120g bag rocket
Woolworths Select Australian extra virgin olive oil & lemon wedges, to serve, optional
Directions:
1. Place all potatoes in a large saucepan and fill with enough cold water to cover. Bring to the boil. Reduce heat and simmer uncovered for 10-12 minutes or until just tender. Carefully pour into a colander to drain. Cool 20 minutes. Put potatoes onto a board and crush lightly with palm of your hand just to break the skin and expose some flesh.
2. Combine crème fraiche, lemon rind, juice and capers in a large bowl. Season to taste.
3. Add the potatoes, radish, parsley and rocket to the dressing. Toss gently to coat. Spoon onto a platter, season. Drizzle with a little extra virgin olive oil and squeeze over lemon. Serve.
Tip1: You can replace rocket with baby kale.
Tip2: You can add flaked hot smoked salmon portions to this recipe for a main course salad
Tip3: You can cook the potatoes the day before, store well drained and covered in refrigerator
