Michelle Obama is on a crusade to help America eat more healthily. She has written a book called ‘American Growth’ about turning part of the White House garden into a vegetable patch and this great and easy recipe is from that book.
Recipe Below:
Takes: 7 minutes
Serves: 4-6
Fresh green peas 300g, shelled (if frozen just cook as per packet instructions)
Small shallot – thinly sliced (you can also use Spring Onions)
Small leek, white part only – thinly sliced
Lemon 1, zest and juice
Extra virgin olive oil 240ml
Fresh mint leaves 20g, shredded
Salt and freshly ground black pepper
Bring a large pot of salted water to the boil. Pour the peas into the water and cook for no more than 2 minutes.
Drain and immediately plunge the peas into a bowl of iced water. Drain and pat dry with a towel. Purée 75g of the peas in a blender.
Place the peas, pea purée, shallot and leek in a medium glass or stainless steel bowl and toss gently to combine. Add the lemon zest and juice, olive oil and mint. Season with salt and pepper and toss gently until the vegetables are coated. Serve immediately.
