My Italian dressing is made with apple cider vinegar which is different than the usual Italian dressings using red wine, balsamic and rice wine vinegars. Apple cider actually goes extremely well with Mexican food. I think it’s the best one to use with Mexican dishes.
I love putting my salad right on top of my spanish rice, refried beans and enchiladas and then putting the dressing on top. The result is amazing. This vinaigrette is zesty, creamy, homemade and thick.
You can even use this recipe as a marinade for chicken or fish.
