A quick how-to for one of my favorite healthy recipes — Kale & Quinoa Salad! Let’s kick off the year with a healthy start, y’all!
Kale & Quinoa Salad:
INGREDIENTS:
-1 bunch of Kale
-2 12oz cans of beans (your choice)
-1/2 cup walnuts
-1/3 cup raisins
-1/4 cup quinoa
-3 small oranges (peeled & sliced in half)
“Vinaigrette”
-3-5 small oranges
-2 tbs olive oil
-1-2 tbs maple syrup
-S&P
METHOD:
1. Put quinoa and 1/2 cup water into pot over medium/high heat. Let come to a boil then simmer for ~20 minutes until the water has soaked into the quinoa.
2. Meanwhile, chop the kale into thin slices and place into separate bowl. Drain beans in strainer and set aside.
3. Slice your 3 oranges lengthwise and juice into a small bowl. Add in maple syrup 1 tablespoon to start and whisk. Slowly drizzle in olive oil while whisking. Add a pinch of salt and pepper. This is where your taste comes into play. If you would like it sweeter, add more maple syrup. More tart, add more orange juice — just play around with it 🙂
4. Once your vinaigrette is smooth, slowly pour it into your bowl of kale; you may not use all your vinaigrette, so add a little at a time, until the kale is coated. Next, add in the rest of your ingredients (don’t forget the quinoa!) and stir until well combined.
5. Taste & Enjoy!
