This is sooooo easy. Just select your favorite vegetables and
give them a good chop. Make a vinaigrette and give a good
toss. Serve as a side dish, on top of lettuce or greens or even
in a pita pocket. Enjoy.
Fresh Vegetable Garden Relish Salad Recipe with Vinaigrette
INGREDIENTS:
Chopped fine:
1 large unpeeled cucumber
1 red bell pepper
1 green bell pepper
1 seeded finely diced jalapeno
3 tomatoes
4 scallions or very small red onion
Vinaigrette:
1/3 cup good quality extra virgin olive oil
2 tbsp apple cider vinegar
1 good tsp whole grain dijon mustard
1/4 tsp salt
1/4 tsp black pepper
1 tsp sugar – I used palm sugar
1-2 tsp minced garlic
There is no right or wrong in this recipe.
Use your favorite vegetables and vinaigrette.
Can serve as a side dish, on lettuce or greens
or even in a pita pocket.
This is a staple in our refrigerator.
