It’s November, which in the Northern hemisphere means colder weather, midterms and COMFORT FOOD. Today we are making some cozy comfort food favourites (vegan of course). These recipes are simple, easy and satisfying. Enjoy!
Swedish-Style Meatballs:
1/2 cup cashew sour cream (recipe below)
1 1/2 cups vegan beef broth (recipe here: http://goo.gl/tEgcPY)
1 tsp soy sauce
1 tsp brown sugar
black pepper to taste
10 meatballs (good recipe here: http://goo.gl/AtsKxP)
pasta or rice to serve
Cashew Sour Cream:
1 cup soaked cashews
1/2 cup water
2 tsp apple cider vinegar
1 tbsp lemon juice
1/8 tsp salt
Twice Baked Potatoes:

How to bake a potato: You can bake potatoes right on the oven rack or on a foil-lined baking sheet. Bake at 400 F the 50-60 minutes. Flip halfway through. Check to see if they are done by poking with a fork. If it is easy to pierce, it’s done!
Mug Cake (approximate, for a regular size mug):
3/4 cup cake mix
3 tsp vegan yogurt
enough non-dairy milk to make it a thick cake batter consistency
Microwave 2 minutes (it might need less or more time depending in your microwave wattage).
