FULL RECIPES:
CACIO PEPE:
SERVES 2-3 people
Ingredients
Angel hair pasta- 50 grams
Fresh Pecorino Romano cheese- 1 cup, grated
Parmesan cheese- 1 cup, finely grated
Black pepper- generous amount, freshly crushed
Salt- 1/2 tsp or as per taste
Olive oil- 1 tsp
Butter- 1 tbsp, melted
Water- to boil the pasta
Parchment paper- to make Parmesan cheese basket
In a big vessel boil water. Once water starts boiling, put salt and then pasta. Boil the pasta for few minutes until done (tender). Drain the pasta in a colander and save the pasta water. Now heat a pan and put olive oil and butter. As the butter starts to bubble crush the black pepper corns into butter to get fresh aroma. Stir nicely then add 2-3tbsp of saved pasta water. Mix it well and let the mixture boil. Now add drained pasta into the boiling mixture and keep stirring until pasta is blended well with the liquid mixture. Now on a low medium flame, add a handful of Romano cheese and crush some black pepper on the pasta and mix well. Repeat this process 2 more times so that pasta turns creamy and saucy. Keep on stirring continuously so that no lumps form out of cheese. Add a few teaspoons of pasta water if cheese is not sticking to the pasta. Once the pasta is ready take pan off the flame. For the Parmesan cheese basket, put a flat pan on low flame. Put a parchment paper on the pan and spread 2-3 teaspoons of finely grated Parmesan cheese in round shape. As the cheese starts to bubble turn off the flame. Let the cheese cool down for couple of seconds then very carefully, peel off the cheese and put it in a bowl to set it in the shape of the bowl. After a couple of minutes the Parmesan cheese basket is ready to be served. Put the prepared cheese and pepper pasta in these yummy cheese baskets and serve it warm with some grated Parmesan cheese and fresh black pepper on top and a slice of warm Italian bread. Enjoy!!

VANILLA BEAN FUNFETTI MUG CAKE
ngredients
All purpose flour- 4 tbsp
Granulated Sugar- 2 3/4 tbsp
Baking powder- 1/2 tsp
Whole milk- 3 tbsp
Unsalted butter- 2 tbsp, melted
Vanilla bean stick- 1/2” stick, crushed
Rainbow sprinkles- 1 tbsp
For icing
Heavy whipping cream- 1 cup
Powdered sugar- 1/4 cup
Vanilla essence- 1 tsp
Rainbow sprinkles
Take a cup and mix flour, sugar and baking powder together. Make a well in the middle and put milk, butter and rainbow sprinkles and mix well with a spoon. Keep the cup in the microwave for 1 min and 40 seconds. Insert a tooth pick in the middle to check if the cake is done. If not, keep it for another few seconds. Now take the cup out and put it in the refrigerator to cool down for few minutes. In the meantime prepare icing. For icing, take a bowl and put heavy cream, sugar and vanilla essence and mix well. Now whisk the cream until stiff peaks form. Put the icing in a plastic bag and tie it properly ( with a rubber band) from the top. Once the mug cake has cooled down, snip the tip of the plastic bag with scissors and put icing on the mug cake as desired. Serve the delicious funfetti mug cake with some rainbow sprinkles on top!!!
