INGREDIENTS
30 gms Basil Leaves
10 gms Cashewnuts
10 gms Garlic cloves
20 gms Parmesan Cheese (grated)
Extra Virgin Olive Oil — 30 — 50 ml
2 mangoes (any variety) — Cut into cubes.
1 apple — Cut into cubes
Salt and pepper
Lettuce — 1 Small bunch
Lemon Juice — 1 tablespoon
METHOD
First step is to shred the lettuce and store it in ice-cold water. Use your hands to tear it.
The dressing for this salad is called the Pesto. For this coarsely blend Basil, cashews, cheese, garlic, salt and olive oil (add it in parts) together.
Now strain the lettuce. Mix apple, mangoes and lettuce together.
Add the dressing and give it a quick but gentle toss.
Top it with grated parmesan and serve chilled.
You can finish it with lemon juice as well (optional).
