Coconut Chicken Rice:
350g chicken
3 cloves glaric
1tspn Turmeric
Chillies (optional)
150g mushrooms
1 tin coconut milk
200g spinach
200ml veg / chicken stock

Bagels
Tomato puree / harissa paste

Ham / olives / salami etc etc

Chorizo & Bean Quesadillas:
Wraps
250g Chorizo
3 garlic cloves

2 tins mixed beans

Halloumi Tacos:
Wraps (I use small ones)
2 packs Halloumi
1tspn Harissa
4tbsp Greek Yoghurt
Paprika

Red Onion

Salmon Pad Thai:
400g rice noodles
2 salmon fillets
80g peas
2 peppers
2 eggs
ginger
3 cloves garlic
1tbsp fish sauce
3tbsp soy sauce
3tbsp sesame seed oil
3tbsp chilli sauce
1 lime
Peanuts
Spring Onions
