Ingredients:
2 cups (300 grams) flour
4 tsp (15 grams) baking powder
1/4 tsp baking soda
3/4 tsp salt
2 Tbs butter
2 Tbs shortening
1 cup (250 ml) buttermilk , chilled (*see note on how to make buttermilk)
* How to make buttermilk:
Combine 1 cup (250 ml) of milk and 1 Tbs lemon juice. Mix and chill in refrigerator.
Directions:
1. Preheat oven to 450 degrees Fahrenheit.
2. In a large mixing bowl combine flour, baking powder, baking soda and salt.
3. Using your fingertips rub butter and shortening into dry ingredients until mixture looks like crumbs.
4. Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
5.Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times.
6. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough.
Place on baking sheet so that they just touch.
7. Bake until biscuits are tall and light gold on top about 15-20 minutes.
8. Enjoy and keep smiling! 🙂
