Crispy Bhajia and Masala Chips Recipes (+ Dosa making) at Geeta’s Fast Food Restaurant, Leicester.

✓ This is a special treat because we finally get to visit the kitchen of one of our favourite vegetarian food places in Leicester, in this video the chefs show us how they make their versions of crispy bhajia and masala chips and kindly reveal some the recipe secrets behind these great snacks.

CRISPY BHAJIA RECIPE INGREDIENTS REQUIRED:
* Thinly Sliced Potato (Bateta).
* Roughly chopped Green Coriander (Lila Dhana).
* Finely Chopped Green Chillies
* Chopped Garlic (Lasan).
* Salt (Namak).
* Rice Flour.
* Chickpea Flour (Besan / Gram flour).
* Water (Pani).
* Oil for frying (Tel).
Fried twice (first half fried and then full fried).

Bhajias (and Pakoras) are a very common street food it is a very popular menu item at most roadside stalls as well as restaurants in India and Pakistan.

MASALA CHIPS RECIPE INGREDIENTS REQUIRED:
* Vegetable Oil
* Garlic (Lasan).
* Ginger (Adrak).
* Capsicum (Bell Pepper).
* Sliced White Onion (Dungri)
* Hot Water (Pani).
* Schewan Sauce (made in-house).
* Ajinototo (Chinese Salt / MSG).
* Salt (Namak).
* White Pepper Power.
* Tomato Ketchup Sauce.
* Fried Potato Fries Chips.
* Roughly chopped Green Coriander (Lila Dhana).
All quickly Wok stir Indo-Chinese style fried on a high heat.

The “Master Bhajia Maker” & “Masala Chips Master” here makes it all look very easy, but it takes many years of practice and skill to get to this level of cooking (+ as a bonus we can watch a masala dosa being made).

This is one of Leicester’s Golden Mile’s “Desi Cafe / Restaurant” and amongst one of our favoute places to visit when ever we happen to be in Leicester.

As you probably know by now, we absolutely love secret places like this, a place serving delicious restaurant quality, home cooked food; but at very affordable street food prices!!!

It’s a place which reminds us of the Indian Subcontinent’s pavement kitchens’ that provide sustenance for its many inhabitants with the cheapest and tastiest of freshly made food anywhere. Reminding us of the street characters who create food that is blessed by hand and human touch and further energised and charged by positive thoughts.

You can go many times to India and love it every moment of your time spent there, (but you’re always sad in the knowledge that India only exists in India and nowhere else) the sights you see, the sounds you hear, the people you meet; all serve to feed you not just physically but also emotionally and spiritually. So when we come across a place such as this; we humbly raise our hat and take a bow because we have not only just got a snack but we’ve also been given a taste of back home.

These guys serve up delicious authentic tasting Mumbai Indian “Street Style Food”.
