5 easy family recipes | Mrs Rachel Brady | UK stay at home mum/mom

This is what we ate for dinner every day Mon-Fri last week, with recipes below! If this is useful and people like it I will do it every week!

RECIPES:

*Beef bourguignon*
2 tablespoons oil
2lb chuck steak
1 onion, diced
1 carrot, diced
1 stick celery, diced
1 whole garlic bulb, diced
2 tablespoons flour
2 tablespoons tomato paste
Fresh rosemary, chopped
Fresh thyme, chopped
1 bottle red wine
500ml beef stock
2 tablespoons butter
250g mushrooms,
250g bacon lardons
Season to taste
– Fry off beef at high temp. Set aside. Add diced veg and sweat for 5 mins. Add beef back in and then flour to coat. Now tomato paste, wine and stock. Add herbs. Bring to boil and simmer for 3 hours. Or put in low oven (140C). Fry off mushrooms and bacon in a little butter. Add for last hour. Make ahead if you like and reheat. Serve with mash and greens.

*Mac and cheese with broccoli, spinach and bacon*
350g pasta
1 head broccoli, cut into florets and stalks diced
Few rashers of bacon, diced
Handful spinach
2 tablespoons butter
2 tablespoons flour
1 pint milk
Handful cheddar
Parmesan to top
– Boil pan of water and add pasta and 5 mins later the broccoli. Cook but not fully, about 2 mins less. Drain. Fry off bacon and add to pasta mix. Make a white sauce (melt butter, add flour, stir, gradually add milk) and add cheddar to it. Mix sauce into pasta mix, add spinach too. Season to taste. Pop in baking dish (or two as this makes a lot – freeze one!) and cover with grated Parmesan. Bake for 20 mins on 180C.

*Shepherd’s Pie (with hidden veg)*
1 tablespoon olive oil
450g mince lamb (or use beef)
Few cloves garlic, diced
1 onion, diced
1 carrot, diced
1 courgette, diced
1 celery stick, diced
1 tablespoon tomato paste
750ml beef stock
Gravy granules, enough to thicken to gravy consistency
Mashed potato to top
Grated cheese
– Sweat garlic and veggies in oil. Add beef and brown. Now add tom paste. Herbs too if you like. Pour in stock. Bring to boil and simmer for 45 mins ish. Add enough granules to thicken. Drain the pie filling so that the mixture is still moist but you have a jug of gravy to serve alongside. Pile into a pie dish and top with mash. Grated cheese on top and bake for 25 mins on 180C. Serve with gravy and veg.

*Italian eggs in tomato sauce*
1 tablespoon oil
3 cloves garlic, diced
1 stick celery, diced
1 stick carrot, diced
2 cans tomatoes
1 tablespoon tomato puree
1 tablespoon dried oregano
Season to taste
4-6 eggs
Garlic bread to serve
– Soften veg and garlic in oil. Add toms, season and simmer for 45 mins. Turn off till needed. Add eggs last minute and pop on lid till cooked – only takes a few minutes. Serve with garlic bread.

*Homemade pizza*
500g strong white bread flour
7g yeast
325ml tepid warm water
1 teaspoon salt
No cook tomato sauce:
250ml passata
1 tablespoon extra virgin olive oil
1 tablespoon dried oregano
1 big pinch salt
1 clove garlic, grated
2 x balls of mozzarella
Few slices of salami
– Mix flour and salt. Add yeast to warm water and mix. Then mix wet into dry to form a dough. Knead just enough to make a dough and leave till doubled in size. Knock back and go again if you like. Cut into 4 balls and stretch out to form bases. (I oil a tray and roll out dough as flat as a I can. Then I press it down when on the tray to flatten and stretch more).
