I’m sharing 3 quick and simple dinner recipes for you. Being a new mum I don’t have much time to cook so I like simple recipes I can whip up when Shay is down. I hope you enjoy them. Don’t forget to leave a comment down below!
Green Thai Curry Recipe
1 tsp of Sesame oil
2 crushed garlic cloves
1 thumb of Ginger
2 sweet Potatoes
1 can of coconut milk
2 handfuls of spinach
1 tbsp of green thai curry paste
150g of cherry tomatoes
100g of brocolli
100g of cherry tomatoes
Heat the sesame oil in a pan add the garlic and ginger fry them off then add it the sweet potato. Add in the green thai curry paste stir well then add the coconut milk, add the tomatoes, brocolli and spinach, season with tamari and cook for 10 mins.
salmon broth kale
2 salmon fillet, chopped
500ml of stock
1 tbsp of tamari
2 handfuls of kale
1 julienned carrot
1 thumb of ginger
2 crushed garlic cloves
1 tbsp of miso paste
Place everything in a pot and cook for 10-15 mins. so easy!
Butterbean salad with rocket and tomatoes
1 tbsp of olive oil
sea salt
1 can of butterbeans
100g of rocket
150g of cherry tomatoes chopped
20g of pecans
100g of pomegranates
Heat the oil and cook off the beans with some sea salt for 5 mins until golden. Plate with the rest of the ingredients and drizzle over some olive oil.
