Litti chokha
One of the most under rated and celebrated dish from the region of Bihar is #LittiChokha. Undoubtedly it is one of the most nutritious and awesome recipe with is very good and healthy as well. Though litti is yet to get its throne in the world of Indian dishes but because of its simplicity, innocence and healthy features, it has won the hearts of millions across the globe. For Chokha:
1 big Eggplant
1 full Garlic
1 Big Onion
1 tbsp Mustard Oil
3 Green Chillies chopped
Handful chopped coriander leaves
1 tsp Roasted Cumin Powder
1 boiled potato
½ cup raw chopped onions
1 tsp Red Chilli Powder
½ Lemon Juice
For Stuffing:
1 cup Sattu Flour
1 tbsp Pickle Masala
Salt to taste
1 tsp Roasted Cumin Powder
1 tsp Red Chilli Powder
1 tbsp Mustard Oil
For Chutney:
2 big roasted Tomatoes
Few roasted Garlic Cloves
1 tbsp chopped green Chillies
1 tbsp chopped Coriander Leaves
Salt to taste
½ Lemon juice
1 tsp Red Chilli powder
2 tbsp chopped Raw Onions
Method:
For the Litti Dough:
Take a bowl, put wheat flour, salt and ghee and water and make a nice tight dough and then spread a little bit of ghee on the dough to keep it moist and keep aside for few minutes.
For Chokha:
To prepare chokha, first roast the eggplant, tomatoes, onion, garlic on oven till its textured is changed to blackish in colour and becomes softNext, take a bowl, put the roasted and chopped, eggplant, onions, few garlic cloves, coriander leaves, green chillies, mustard oil, mashed potato, raw chopped onions, cumin, red chilli powder, lemon juice and salt and mix everything together. Your chokha is ready.
For Litti stuffing:
Take a bowl. Put sattu, and all the other ingredients mentioned above and mix everything together. Your litti stuffing is ready.
For Chutney:
Take a bowl and put all the ingredients, mix and mash everything together with the help of the backside of a spoon. Your yummy hot chutney is ready.
