Kashmiri Aloo Dum
Serves- 2-3
Ingredients
Boiled baby potatoes- 1 bowl
Mustard oil- 2-3 tbsp
Whole spices :
Bay leaves (Tej patta)- 1-2
Star anise (Chakra phool)- 1-2
Cloves- 2-3
Stone flower (Pathar phool)- 2-3
Big cardamom- 1 whole
Small cardamom- 1 whole
Mix of coriander, cumin & fennel seeds- 1 tsp
Cinnamon – 1 stick
Dry red chilli- 1 whole
Curd- 1 cup
Turmeric powder- 1 tsp
Red Chilli powder- 1 tsp
Cumin powder- 1 tsp
Chopped green chillies- 1-2 tsp
Salt- to taste
Cardamom powder- a pinch
Fennel powder – a pinch
Water- as required
Method
Prick all the boiled baby potatoes.
Heat mustard oil in a pan & shallow fry the boiled baby potatoes.
Remove them from the pan & place them on a plate with paper towel to soak the excess oil
To the same oil, add the whole spices & stir well.
Add curd, turmeric powder, red chilli powder, cumin powder, chopped green chillies, salt &
mix well.
Add some water & bring to boil.
Add a pinch of cardamom & fennel powder.
Garnish with fresh coriander & serve hot.
