Italian Mashed Potatoes
Olive oil makes a great substitute for butter, whether it be in sauteeing, drizzled on some warm bread or used in a recipe.
What dish needs butter more than mashed potatoes? We’ll put olive oil substitution to the test with something I like to call:
Italian Mashed Potatoes.
You’ll need:
1 tomato, sliced
2 large red potatoes
1 pearl onion
4 Cups of water
3 tbsps milk
2 cloves of garlic
Basil, fresh or dried
1 tbsp Parmesan Cheese
and of course, olive oil
This serves 2, as a side to a main dish.
Of course, prepping the potatoes is easy.
Bring water to a boil with a dash of sea salt and put the potatoes in (I’m going with skins on)
Peel and chop the onion and add it as well.
After the potatoes are done, mash them together with the onion.
Grate a clove of garlic and add to 2 tablespoons of olive oil. I use this dish, but chopping the garlic works as well.
Add the olive oil and garlic, roughly 1 tbsp of parmesan cheese, 2 tbsps of chopped fresh basil or 1 tbsp of dried basil, and 3 tbsps of milk and continue to mash until you achieve the desired consistency.
For the tomatoes, simply sautee the slices with a little olive oil and sea salt, with either more of the basil or some parsley, I’d say about a minute each side.
Serve the mash on the tomatoes, topped with a little chopped basil and more olive oil with the grated garlic.
You know what they say, I say tomato, you say potato. I guess it’s about time we call this whole thing off.
