— Make these into Italian bites by using fresh basil instead of dill. Serve with a slice of buffalo mozzarella and tomato over the top, and sprinkle with freshly ground pepper and a drizzle of olive oil.
— Go Greek and add 100g of crumbled feta cheese, 1 teaspoon dried oregano and 2 tablespoons of chopped fresh mint in addition to the fresh dill. Serve with tzatziki sauce on the side.
— Make a veggie wrap with leftovers: wrap the fritters in a flour tortilla wrap or pitta bread with some mixed greens and tomato slices. Garnish with an array of sauces, depending on your mood – mayonnaise, houmous, salsa and soured cream, tzatziki, tomato chutney – almost anything goes!
