INGREDIENTS:
-2 tbsp sesame oil (un-toasted)
-4 tbsp curry paste (see ingredients below)
-2 free range chicken breasts sliced into 1/2 inch strips
-1 cup red pepper sliced
-1 cup broccolini roughly chopped
-1 cup sugar snap peas
-1 cup fresh peas (can also use frozen)
-1 cup low sodium vegetable stock
-1 1/4 cups full fat coconut milk from can
Thai Green Curry Paste

-2-3 jalapeño seeded and chopped
-2 shallots finely sliced
-1 inch ginger root peeled and minced
-2-3 cloves of garlic (2 tbsp) minced
-2 lime leaves chopped
-1 tsp turmeric powder
-1/2 tbsp coriander powder
-1 tsp cumin powder
– 1/2 tsp white pepper
-1 tsp coconut sugar
-1 tbsp soy sauce or tamari
-1 cup fresh cilantro roughly chopped with stems on
-1 lime juiced
-1/4 cup full fat coconut milk from the can
