This is a quick, delicious and easy recipe. A perfect family meal on a budget.
For a family of 4
Ingredients used:
600g of boneless and skinless chicken thigh cut into fillet.
season with 1 tablespoon all purpose seasoning
1 tablespoon corn flour
The vegetable used:
2 handfuls of mushrooms sliced
a handful of sliced carrot
a handful of mangetout
2 mix colour bell peppers( I used yellow and red) sliced
1 large purple onion sliced
1 tablespoon of mix garlic and ginger paste ( I used freshly minced)
A few spring onions sliced
300 g of medium egg noodles (I used blue dragon brand)
For the stir fry sauce :
1/2 cup vegetable stock
1 tablespoon sesame oil
2 tablespoons dark soy sauce
1 teaspoon worcestershire sauce
1 teaspoon corn flour
Cooking methods:
Heat 4 tablespoons of oil in a wok, then add in the seasoned chicken fillet fry for about 8 to 10 minutes or until chicken is fully cooked.
Once chicken is cooked add in the vegetables you are using and fry over high heat for about 3 minutes, add in the eggs noodles which you have prepared according to the package instruction and fry for 1 more minute then pour in the stir fry sauce and continue cooking stirring for further 3 to 4 minutes or until the sauce has thicken and fully cooked. turn off heat and mix in some diced spring onions and serve immediately.
