Recipe Name – Gunder Pak
Fact:
Also commonly known as gond pak, this Gujarati winter delicacy was traditionally made with various types of gond that was suited for men and women separately. Classified as a ‘vasana’ recipe, which essentially means encompassing all kinds of superfoods needed to fortify the body against the harsh winter, the pak has a long shelf life and can be easily stored to last the entire duration of the season.
Ingredients:
100 Gm Edible Gond
50 Gm Ghee
100 Gm Grated Dry Coconut
200 Gm Grated Jaggery
2 Tbsp Chopped Almond
2 Tbsp Chopped Cashews
1 Tbsp Chopped Pista
1 Tbsp Roasted & Crushed Poppy Seed
1 Tbsp Ginger Powder
1 Tbsp Ganthoda Powder
1 Tsp Cardamom Powder
For Cooking
100 Gm Ghee
Steps:
In a blender jar, add edible gond and grind it, strain and keep aside
In a bowl, add ghee, gond powder and keep aside for 12 hours
Melt ghee in a pan
Add jaggery and cook until melt
Add edible gond mixture and mix well
Add coconut and mix well
Add dry fruits,poppy seeds and mix will cook for 7-8 minutes
Add ginger powder, ganthoda powder, cardamom powder and mix well, cook for 15-16 minutes or until mixture become thick
Transfer the mixture into a grease tray and allow it to set for 30-40 minutes
Cut into square and serve
