I threw this together as a quick chicken option for Friday night supper and it got demolished better than the actual meal I had planned 🤣 so I had to make it again to figure out the proper recipe and boy oh boy, this one is a keeper! Save it coz you’re gonna love it, inshaallah.
Easy Saucy Chicken Marinade by @fehmz
This recipe is for 500g chicken fillets, butterflied or cut into strips.
2 tblsp garlic peri peri masala (see note below for sub)
1/2 cup plain yoghurt
1/2 cup fresh coriander
Salt
Pepper
1/4 tsp turmeric
1/4 tsk ground cumin
1/4 cup lemon juice
1 tblsp lemon pesto (see notes for info)
1/2 tsp lemon pepper
Combine with an immersion blender until you get a thick marinade. Add a little water if too thick.
Marinate your chicken in this sauce for 1 hour or overnight.
To cook:
Option One: Braai over hot coals and baste continuously with marinade.
Option Two: Add ghee to a pot, place chicken and pour the sauce in. Close lid. Cook on medium high for 10 or so minutes until done. Do not overcook.
Serve with chips/rice/naan/salad anything goes!

Notes:
1: The peri peri masala is @sujees_gourmet_food and I purchased it from @forsmay_butchery
2. Sub peri masala for 1 tblsp tomato paste, 2-3 tsp ground fresh red chilli, 2 tsp crushed garlic)
3. Lemon pesto is a paste made using preserved lemons – lemons that have been cured with salt (sometimes other spices too) for minimum 2 weeks. Gives an intense umami lemony flavour
4. If you don’t have lemon pesto, just leave it out. I bought mine from @umamifoodstudio
