Chicken Varattiyathu or roast is one of the most commonly made dishes in Keralite homes. A wonderful dish of onions and chicken in a delicate masala makes chicken varattiyathu a must have side dish. This is a yummy chicken recipe, spicy, hot and yet crunchy with all the pieces of cut dried coconut flavoring it. In Kerala we mostly use coconut oil and that enhance the taste of all Kerala recipes.
