Adobo Fried Chicken and Waffles with Ray Ligaya – Fidel Gastro Recipes

Matt Basile is back with another delicious recipe. We all know how amazing fried chicken is, and we all know how good waffles are. This recipe combines the 2 Adobo style. Special guest Ray Ligiya is co-hosting this episode as well.

Your first step is to select your cuts of chicken and soak them in buttermilk. Next you’re going to add flour, chili powder, onion, and salt in a mixing bowl. Take a piece of chicken and place it into the flour mixture. Roll it around in there a bit and then squeeze it super tight, really locking the flour to the chicken. This will give your chicken a real crispy finish after it’s fried. Place the chicken into a pre-heated frying pan with enough oil to fully submerge the chicken. Repeat this for all your chicken pieces. Be sure to have the oil up high enough that it’s slightly boiling. Let your chicken cook until it’s completely fried and the meat inside has turned white. When it’s done, pull it out and place on a plate covered with several paper towels to soak up the excess grease.

Now it’s time to make some waffle batter. Matt has chosen a recipe for waffles that makes use of sour cream. This is to compliment the Adobo style fried chicken. In another mixing bowl combing flour, sugar, and cinnamon. Crack 5 eggs into a separate bowl and mix 1/2 cup of sugar into the eggs, stir thoroughly, then add the flour mixture you made earlier into the eggs, mixing it well also. Add a bit of sour cream to this and then stir until you get a smooth, creamy consistency.

Gently pour enough of this mixture into your waffle maker to ensure you have a good sized waffle and then patiently wait for it to cook. It’s important to keep an eye on your waffle maker as it’s an easy mistake to let your waffle overcook. When done pull out the waffle and plate it.

The next step is to make Adobo Maple Syrup. Chop up fresh garlic, and red chili peppers. Next heat a frying pan and melt butter in it. Saute your garlic and chili peppers then add your desired amount of maple syrup, mix this well stirring frequently. When you have reached your desired consistency pour this into a serving bowl.

The last step in this recipe is to plate your food. On the plate you have your waffles on stack up the fried chicken and then drizzle your Adobo Maple Syrup over the entire creation.
