Tuscan-Style Tuna Salad

Yields: 4 servings which each serving a cup
Ingredients:
1) 10 cherry tomatoes in quarters
2) ¼ teaspoon salt
3) 2 tablespoon of lemon juice
4) 2 tablespoon of virgin olive oil
5) 4trimmed & sliced scallions
6) Fresh ground pepper
7) 26 ounce cans of drained tuna
8) 115 ounce can of white beans
Instructions: ·
Mix tuna, beans, salt, lemon juice, oil, scallions, pepper & tomatoes in a bowl. Gently stir and then refrigerate until it’s ready to serve.
