Salmon nicoise salad

Yields: 4 servings
Ingredients:
1) 650 grams of potatoes
2) 300 topped green beans
3) 60ml of virgin oil
4) 65g of kalamata olives
5) 250g of Atlantic salmon fillets
6) 4 eggs
7) 2 chopped ripe tomatoes
8) 2 tablespoons Dijon mustard
9) 1/3 cup fresh dill sprigs
10) 120g baby mesclun
Instructions:
- · Cook potatoes for 12 minutes and half them.
- · Add beans to boiling water for 2-3 minutes & run under cold water.
- · Boil eggs for 7minutes, cool in running water, peel & halve.
- · Cook salmon according to directions and flake into large piece.
- · Mix oil, mustard & lemon juice in a jug. Season the mixture with pepper & salt.
- · Divide the beans, potatoes, salmon, eggs, tomatoes, olives and baby mesclun evenly into 4 plates. Drizzle over the seasoning and serve.
