What I Eat in a Day | Trying Vegetarian Meals (Affordable & Healthy)

This is the VEGETARIAN CHALLENGE! I challenged myself to DITCH MEAT FOR 24 HOURS, WHILE SAVING A DOLLAR! IT WAS CHEAP, INEXPENSIVE, YES, AFFORDABLE, HEALTHY AND TASTY!

I loveeeee watching “What I Ate Today” or “What I Eat in a Day” videos on YouTube! So, based on the feedback I received from my previous video, “What I Ate Today | Healthy Breakfast” I received requests to show what I eat in a FULL day! Unfortunately I did not include snacks, but rather balanced meals! Don’t worry, it’s still YUMMY!!

I loveee cooking and each and every recipe was AMAZING (these are recipes I’ve customized to appeal to my palate). The foccacia roll is not ‘vegan’ but can be included within the vegetarian plan.

FOOD RECIPES (AS SHOWN):

MEAL ONE ||
Fruit Smoothie
(FROZEN) 1 whole banana, one half of a mango (with skin intact), 4 strawberries, blackberries, infused water (with citrus/ginger slices), honey, ground cinnamon, and 3 tbsp of chia seeds.

INFUSED WATER ||
Lemon slices, mango slices (with skin intact), and ginger slices (skin intact)

MEAL TWO ||
BANANA PANCAKES
COMBINE & BLEND DRY INGREDIENTS:
– 1/4 – 1/2 cups Old-Fashion Rolled Oats (365 Brand from Whole Foods)
– 2 tbsp of light brown sugar
– 2 tsp of ground cinnamon AND ground nutmeg
COMBINE & BLEND ‘WET’ INGREDIENTS:
– 1 frozen banana
– 1/4 cup (slightly less) Dream Blends Coconut, Almond & Chia Drink
– 1 tsp Pure Vanilla Extract
**COMBINE DRY AND WET INGREDIENTS LAST**
OPTIONAL || pour 1 tsp. of almond oil in pan for pancakes.

HONEY ALMOND GLAZE (for BANANA PANCAKES) ||
(I prepared glaze in a pyrex bowl that was placed within a pan that held BOILING water)
– 2 tbsp Maranatha No Stir Almond Butter
– 1 tbsp Raw Honey
– 1 tsp Spectrum Almond Oil

MEAL THREE ||
RUSTIC HUMMUS SUPREME (my creative name LOL)
– 1 Gold Yukon Potato
– 1 Clove Fresh Garlic
– Season with Thyme, Sage, Chilli Powder, Garlic Salt, and Mrs. Dash (chicken flavor) *OPTIONAL*
– 1 tsp Spectrum Almond Oil to prevent sticking
BAKE POTATOES AT 350 DEGREES FOR 15-20 min.

Simmer chick peas & 1 clove of fresh garlic AND saute one quarter of a green bell pepper and red onion.

*TOAST WHOLE WHEAT FOCCACIA ROLL IN OVEN *

COMBINE & BLEND ||
1/2 cup of chick peas, one quarter of roasted green bell pepper, 1-2 tsp of lemon juice, 1 tsp of Spectrum Almond Oil, and 1 tbsp of tomato sauces.
