What I Eat In a Day + Recipes: FALL EDITION (VEGAN)

Here are some simple, easy, cheap meal ideas for you all! When Fall comes around I find myself craving yummy, comforting foods. Let me know if you try any of these out yourself!

{ PUMPKIN PIE OATMEAL }
1 cup oats
1 tbsp ground flaxseed
¼ tsp turmeric
1 tsp pumpkin pie spice (or a combination of cinnamon/nutmeg/ginger)
2 ½ cups water
¼ cup pumpkin puree
1 tsp vanilla extract
Juice of ½ lemon
Toppings I used: fresh banana, cranberries, cacao nibs, almond butter, blackstrap molasses
* Combine all ingredients in a saucepan over medium heat until the oatmeal reaches your desired level of thickness. I find that stirring the oats frequently help to make them more creamy!

{ ROASTED VEGGIE BOWL}
3 small carrots
½ red onion
2 cups fresh broccoli
1 small cucumber
Juice of ½ lemon
Garlic powder, dried rosemary to taste (I probably used about 1 tsp each)
½ cup chopped cherry tomatoes
2 tbsp sauerkraut
1 heaping cup beans of your choice
Large handful of mixed greens
Apple Cider Vinegar to taste
* Combine the carrots, onion, broccoli, lemon juice, and seasonings in a bowl and then bake on a silicone mat or parchment paper for 35 min at 400F. Toss the remaining ingredients together in a bowl and you have a delicious salad!

{ CREAMY SWEET POTATO BOWL }
2-3 small sweet potatoes
Frozen peas, thawed
Cooked Brown Rice
Broccoli Sprouts
Sauerkraut
Sauce (serves 1): 2 tbsp tahini, 1 tbsp dijon mustard, 1 tsp maple syrup, 1-4 tbsp water to thin
* Cut the sweet potatoes into medallions and bake at 400F for 35 min. Add your desired portions of the remaining ingredients into a large bowl and drizzle the sauce on top!
