NOT JUST FOR VEGANS! This is a GREAT meal for anybody. I promise its delicious and will fill you up and leave you feeling great. My wife coked it all and I kinda filmed it and helped her prep.
We used Golden potatoes in coconut oil, seasoned with sea salt and lemon pepper. For the veggies we did bruseel sprouts and broccoli , stir fried in coconut oil. For the pasta we used vegan pasta, sautéed onions, garlic, and mushrooms, then adding in veg broth and tomatoes. For the salad we did a homemade citrus dressing with spinach, blueberries, blackberries, and crushed walnuts.
This meal is easy, just gotta get the timing down for everything.
