1 Onion chopped
1 tbsp Lemongrass chopped
1 tbsp Ginger chopped
4 Cloves Garlic chopped
1 handful Cashews (soaked for 30 min)
1 tbsp Turmeric Root (or 1/2 tsp Powder)
2 dried Chili (soaked for 10 min)
5 large Chili chopped
200 g Rice Noodles (prepared)
200 g Tofu diced
3 cups Beansprouts
1 cup Coriander
1 cup Mint
3 tbsp Lime Juice
250 ml Coconut Milk
3 tbsp Soy Sauce
800 ml Stock (Mushroom)
2 tbsp Oil
