Air Fryer Vegetarian Recipes
Teriyaki eggplant
1 eggplant about 1 and 1/2 pounds
¼ cup of low sodium soy sauce
1 tablespoon of red wine vinegar
1 tablespoon of toasted sesame oil
¼ cup of light brown sugar
1 tablespoon of red pepper flakes
2 cloves of garlic, smashed
1 inch piece of fresh ginger, grated
Cut the eggplant in half score the cut side and pierce the skin side with a skewer
Marinate the eggplant for an hour and a half. Air fry the eggplant at 375 degrees for 10 minutes on each side
Pickling liquid
1 cup of water
½ cup of distilled white vinegar
½ cup of rice wine vinegar
1 tablespoon of salt
¼ cup of granulated white sugar
Bring to a simmer, stir and pour over thinly sliced vegetables
Crispy Parmesan Squash
2 large squash cut into ¼ in planks
1 teaspoon of kosher salt
¼ teaspoon black pepper
1 cup of all purpose flour
2 eggs beaten with 2 tablespoons of water
2 cups of breadcrumbs
1 tablespoon of dried oregano
½ cup of grated Parmesan cheese
General Tso’s Cauliflower
12-16 ounces of cauliflower florets
1 egg beaten
2 tablespoons of low sodium soy sauce
1 tablespoon of rice vinegar
1 cup of rice flour
Oil sprayer
FOR THE SAUCE
¼ cup low sodium soy sauce
2 tablespoons of rice vinegar
2 tablespoons of sake (you can substitute apple juice if you don’t want to use alcohol)
1 tablespoon of cornstarch
¼ cup of light brown sugar
2 cloves of garlic, chopped
½ inch piece of fresh ginger, peeled and grated (OR 1 teaspoon of powdered ginger)
1 teaspoon of avocado oil
1 tablespoon of tomato paste
3 or 4 dried small red hot chili peppers (optional)
5 scallions, chopped
1 tablespoon of toasted sesame oil
Serve over steamed rice
Vegetarian Sausage, peppers and broccoli
1 package of Beyond Meat Italian sausage
2 red bell peppers, sliced
1 large onion, sliced
3 broccoli crowns
1 tablespoon of dried oregano
1 teaspoon of kosher salt
3 tablespoons of catsup
2 tablespoons of red wine vinegar
Stuffed mushrooms
6 large Portobello mushrooms
Salt and pepper
Spray of avocado oil or other neutral oil
6 Beyond Meat breakfast sausage, cooked and chopped
½ an onion, chopped small
½ cup roasted red peppers, chopped
1 cup of frozen chopped spinach, thawed and squeezed
One 5.5 ounce package of Boursin cheese
½ cup of dried breadcrumbs
Air fry at 350 degrees for 15 minutes or until tender
