hot for food shows you how to whip up 3 easy vegan sandwich fillings perfect for the week back to school! You can make the edamame mash, chickpea tuna & curry chik’un salad ahead and have a variety of tasty lunches for the whole week.
** all filling recipes make enough for 3-4 sandwiches each **
edamame mash ingredients:
1 1/2 cups shelled & cooked edamame
2 garlic cloves
1 tbsp lime juice
1 tbsp vegan mayonnaise
2 tbsp fresh cilantro leaves
1 tbsp fresh mint leaves
1 tbsp fresh dill fronds
1/4 tsp ground mustard
1/4 tsp sea salt
1/4 tsp ground pepper
1. Combine all the ingredients in a food processor until a mash is formed. It’s the consistency between hummus and egg salad
2. You can add any toppings you like but we really like extra vegan mayo, sauerkraut, spinach, and tomato
chickpea tuna ingredients:
1 x 15 ox can chickpeas, drained & rinsed
1/3 cup vegan mayonnaise
1 tbsp lemon juice
1/4 cup red onion, finely chopped
1/3 cup dill pickles, finely chopped
1/3 cup celery, finely chopped
1/2 tsp old bay seasoning (you could also just add a combo of spices like cumin, paprika, chili powder etc.)
1/4 tsp sea salt
1/4 tsp ground pepper
1. Mash the chickpeas with a potato masher or run them through a food processor.
2. Combine the chickpeas with the remaining ingredients and mix well.
3. Add any toppings you like but we like lettuce, tomato, and avocado slices!
curry chik’un salad ingredients:
2 1/2 cups chopped vegan chik’un (we used Yves brand / approx. 2 pkgs)
2 tsp vegetable oil (for cooking chik’un)
sea salt and pepper to taste
1/2 cup vegan mayonnaise
1/2 cup celery, finely chopped
1/4 cup raisins
1 tsp curry powder
1/2 tsp onion powder
1/4 tsp paprika
1. Over medium heat brown vegan chik’un with vegetable oil and add sea salt and ground pepper to taste. This just helps it bring out more flavour. It tends to be a bit slimy and weird straight out of the package! Allow the vegan chik’un to cool before adding the remaining ingredients
2. Mix the remaining ingredients with the chik’un until well combined.
3. Feel free to add any other toppings you want but we like extra vegan mayo, shredded carrots, and spinach!
