Requested recipe video of how to make the homemade salsa that I am constantly referring to in my grocery hauls! 😉 Also, as a bonus! Cucumber Avocado Salad/salsa (could be used as either) that I generally make at the same time if I have a cucumber on hand, since they use similar ingredients.
The salsa has just evolved over time and I vary it up & add a number of optional ingredients depending on what I feel like, which I will list below. The cucumber avocado salad was inspired by Starlight Cafe in Tomorrowland at DISNEY WORLD!! 🙂 We had a cucumber salad there that was nice and light, and I sought out different recipes when we got home to try to make a salad similar to it. I will post a link to the recipe I used as inspiration below, although I do a few things different from that link.
Homemade Salsa
– 3 to 6 Roma Tomatoes (easier to cut) or 3 regular size tomatoes
– 1/2 to 1 avocado
– 1/2 to 1 onion (yellow or white is fine)
– 2 tbsp garlic
– 1/4 cup cilantro
– Salt & pepper to taste
– Squeeze limes (2-3) or lime juice over the top
Optional add ins: Black beans, corn, black olives, or peppers… I will usually only pick 1 or 2 of these to add in additionally.
Cucumber Avocado Salad, my recipe:
– 1 to 2 cucumbers
– 1/2 to 1 avocado
– 1/2 to 1 onion
– 2 tbsp garlic
– 1/4 cup cilantro
– 1-2 limes or lime juice
– Salt & pepper to taste
– Dill for garnish on top & to taste
Optional Add ins: Artichoke, Radish (yum!), tomato, or carrot
