INGREDIENTS:
3 cups arugula leaves
1/2 of a large tomato
1/2 of a medium cucumber
1 cup chopped peppers
1 to 2 tablespoons chopped onions
DRESSING:
1 teaspoon balsamic vinegar
1 teaspoon safflower oil (optional)
1 teaspoon olive oil
1/8 teaspoon black pepper
1/2 teaspoon basil leaves (dry or fresh)
1 tablespoon herb blend (your choice)
2 tablespoons fresh orange juice
1/2 teaspoon dijon mustard
Salt to taste
