Breakfast – Almond Fig Rawnola
(Serves 2)
5 chopped figs
7 chopped dates
1 cup of oats
1 tsp cinnamon
1/4 tsp almond extract
1/4 cup buckwheat
1 – 2 tbsp water (optional, only if mixture is dry)
Toppings of your choice + any plant based milk
* Combine all ingredients except for buckwheat into a food processor and blend to form a uniform mixture. Add in buckwheat and pulse to combine. Top as desired (I used fresh fruit and soymilk)
Dinner – Creamy Sweet Potato Pasta
(Serves 3)
1/2 cup cashews, soaked
1/2 cup nutritional yeast
2 tbsp soy sauce (if GF, use Tamari)
3/4 cup unsweeetened soy milk, or other plant based milk of choice
1 large sweet potato, cooked
1-2 tbsp lemon juice
1 clove garlic
salt to taste
8 oz baby bella mushrooms
2/3 cup frozen peas
16 oz pasta of choice
Black pepper to taste
* Prep – soak the cashews in water for at least 5 hours, then drain. This recipe also calls for a baked sweet potato, so you can either boil it, roast it at 400F for 65ish minutes, or microwave it for ~ 3 minutes 🙂
(1) In a blender, combine cashews, nutritional yeast, soy sauce, soy milk, lemon juice, sweet potato, and garlic. Blend until smooth, adding optional salt to taste and water to thin, as necessary.
(2) Bring a medium pot of water to a boil and cook 16 oz of pasta of choice according to package instructions
(3) In a large pan over medium heat, sautee the mushrooms with water until cooked, then add in the frozen peas and let them thaw
(4) Add the drained pasta and sauce to the pan and stir well to combine
(5) Cook the finished dish on low heat until it is completely warm, then serve with black pepper to taste
