Hey Everyone! So for today I want to show you how I make my version of a chicken fried rice. This is incredibly quick and super easy to put together which makes it the perfect week night dinner! The secret ingredient that I use when making my chicken fried rice is using a dark soy sauce rather than a regular. Dark soy sauce is a lot less salty and it has a wonderfully golden almost molasses color. This way you can adjust the saltiness of your rice and still have a wonderfully restaurant style fried rice.
Ingredients:
2 cups cooked Basmati rice cooled
1/4 cup Dark soy sauce
salt & pepper to taste
1/2 cup frozen peas & carrots
4 chopped scallions
1/4 cup shredded cabbage (optional)
3 whipped eggs
1 chicken breast
1 clove garlic
1 small piece grated ginger
2 Tablespoons dark soy sauce
Salt & pepper
First start off by cutting your chicken to small pieces. Place it in a bowl and season it with the salt and pepper. add the soy sauce, ginger and garlic.
Heat up the saucepan with a bit of oil and add the chicken. Stir until fried and crispy.
Add the rice to the pan and fry it with 1/4 cup of dark soy sauce and season it with salt and pepper.
Next push the rice and chicken to the side of the pan and add the eggs cooking them just until they’re done.
Mix everything together and add the peas, carrots, scallions and cabbage. Mix everything well to warm up the veggies and your fried rice is ready to serve.
