Hey guys! I wanted to share a few plant based recipes that are total winners.. Perfect for meatless Mondays or if you’re trying to cut down on meat & dairy. Hope you enjoy!
Avocado Quesadillas
1 Avocado
1/2 of a diced tomato
1/2 of a diced onion
1 Lime
2 Tortillas
Fresh Cilantro
Salt and Pepper
Spinach Pesto Pasta (I actually cut this recipe in half for the video)
1/2 cup raw cashews (you could also try toasted pine nuts)
6 cups loosely packed spinach
1 bunch basil
1/4 cup unsweetened non-dairy milk
1/2 lemon juiced
salt & pepper to taste
Cauliflower Buffalo Wings (recipe adapted from Dashing Dish)
1 head Cauliflower
3/4 cup Water
3/4 cup Oat flour
1/2 tsp Garlic powder
1/2 tsp Salt
1/4 tsp Pepper
1 cup Buffalo Sauce
Jackfruit Slider
Packaged Jackfruit
1 Tablespoon Olive Oil
½ an Onion, sliced
3 Cloves of Garlic, minced
¼ Cup Vegetable Broth
¾ Cup BBQ Sauce
