Bourbon Maple Mustard Pork Tenderloins
1 Pkg Pork Tenderloins (2 per pkg)
2 Tbsp Olive Oil
1 C Maple Syrup*
2 Tbsp Bourbon
1/4 tsp Cayenne Pepper
3 Tbsp Dijon Mustard
1 Tbsp Whole Grain Mustard
Sat & Pepper to taste
*Maple Syrup from Boxler Maple a local NY family farm
Cut pork into chunks approx 2″ each. Season with salt & pepper on both sides.
Heat 1 Tbsp oil in a pan. Sear the pork on all sides, once completed remove pork and set aside.
Keep heat medium to high, pour in maple syrup stirring for a minute. Add in bourbon, cayenne pepper, dijon & whole grain mustard. Stir until sauce starts to thicken. Add pork back to pan, cover, lower heat and simmer for 20 minutes, turning after 10.
