In this episode of Abbey’s Kitchen, Abbey wants to get your back to school/work right with some creative lunch recipes. Yes, packing lunches can be a huge bore. If you’re like most people you’re probably switching between a salad or sandwich, and it’s getting a little exhausting. So Abbey has decided to make a love child of the salad and sandwich and make cold rolls three ways. Cold rolls are awesome because they’re little bundles of deliciousness packed with all the contents of your fridge. Abbey is excited to clear out her fridge, chop up a bunch of vegetables and make an amazing lunch that will make everyone in your lunch room totally jealous.
Let’s do this!
First up, the Greek Salad Wrap. Soak your rice paper in lukewarm water for a few minutes. First, add shredded romaine lettuce, cooked cous cous, grilled chicken, tomatoes, cucumber, red onion, feta and olives. Now it’s time to roll. Fold in the sides and then roll the whole thing up nice and tight.
Next let’s make a dip. Start with extra virgin olive oil, red wine vinegar, mustard, honey, oregano and a pinch of salt and pepper to taste.
Next up, the Shrimp & Peanut Roll. To the rice paper, add cooked shrimp, soba noodles, carrots, avocado, red cabbage, edamame and cilantro. Tuck in the sides and roll everything up nice and tight.
To make the dip, add natural peanut butter, coconut milk, tamari, coconut sugar, lime juice, sriracha and a pinch of salt and pepper to taste. Stir it until smooth and enjoy.
Finally, the Orange Beet and Quinoa Rolls. To the rice paper, add cooked quinoa, oranges, shredded beets, goats cheese, almonds and mint. Wrap those sides in and roll it up nice and tight.
To make the dip, start with extra virgin olive oil, balsamic vinegar, mustard, honey, poppy seeds and some salt and pepper to taste. Mix it up and get dipping!
