Healthy Halloween Recipes

Hello Gals and Ghouls! It’s that time of the year again and Abbey has put together a collection of fantastic Halloween Recipes that are not only healthy but fiendishly delicious.

Her first recipe is for a festive pumpkin shaped grill cheese. Using pumpkin shaped Halloween cookie cutters cut 2 pieces of pumpernickel bread into two tiny little bread pumpkins. Then melt butter and brush it evenly onto the outside of the bread. After that spread the inside of one slice of bread with hot pepper jelly, add a few slices of orange tomato and some shredded cheddar cheese. The more aged your cheese is the better flavor you’re going to get from it so keep that in mind when making your cheddar selection for this Halloween treat. Top this with the other slice of bread and transfer into a frying pan pre-heated to medium. Cook for about 2 1/2 minutes until golden brown, flip it to the other side than cook for another 2 1/2 minutes.

As we all know, no grilled cheese is complete without a bowl of tomato soup and in the spirit of Halloween Abbey decided to spookify hers with some eyeball floaters. Just think of the look on your kids faces when they see these things floating in their soup next to pumpkin shaped grilled cheese sandwiches. Halloween is fun so why shouldn’t Halloween recipes be fun too?

To make these eyeball floaters for our tomato soup we’re going to take some green olives stuffed with pimentos and cut them in half with a paring knife. Next cut a small crater out of some bocconcini balls just big enough to stuff the olive half-way into the ball. It’s important to remember when you’re cutting the crater into the bocconcini ball not to go more than half-way through the ball. To serve up this creepy concoction simply choose your favorite tomato soup and put 4-5 of these right of top with your pumpkin shaped grill cheese to the side for easy dunking.

Abbey’s last recipe isn’t for the kids, but let’s face it, after all the hustle and bustle of finding them costumes, keeping them from devouring their entire bag of candy in one night and making sure they hit the right houses you’re probably going to need some “adult refreshment”. Abbey saves the day with her Creepy Ginger Cocktail recipe.

Interestingly enough Abbey named this drink after a red-head she once went on a blind date with that wouldn’t stop complimenting her neck, or so the story goes. This Halloween themed cocktail is special in that it features all of Abbey’s favorite flavors and has the added probiotic benefits of kombucha.

Abbey pulverizes a 1/2 cup of freeze dried berries in a food processor until they reach a power like consistency. She then pours a half a cup of pomegranate molasses into a dish and rims her cocktail glass with it before putting it right into the powder, leaving a truly creepy looking effect on the glass itself when your turn it right side up again. Next she adds 6-7 mint leaves into the glass and mashes them down adding a bit adding a bit of lemon juice along the way. You will then want to add an ounce of your favorite Halloween vodka, ginger flavored kombucha and of course some ice.

That completes this collection of spooktacular Healthy Halloween Recipes that won’t leave you with the sugar shakes in the morning.
