Easy Pineapple pudding

INGREDIENTS
Pineapple – 2 cups, chopped finely
Milk – 2 cups
Sugar – 5 tbsp + 4 tbsp( can use condensed milk instead)
Chinagrass / agar agar – 6 to 7 gms
Yellow food color – 2 drops
Almond sliced – for garnishing
Can use chopped cherries and dry fruits also
Saute pineapple chopped with 4 tbsp of sugar until done. Can add a pinch of turmeric powder for a yellowish texture..
Boil milk. Meanwhile melt chinagrass along with half a cup of water in another pan until it melts to a clear liquid. Over low flame
Once milk starts to boil, add sugar or condensed milk. Combine well. Add the yellow food color. Add melted chinagrass . Cook for a minute and remove from flame
Layer the sauteed pineapple in a pudding tray. Top it with almond slices
Pour the milk mixture over it . Let it cool for 10 minutes. Then top it with remaining sauteed pineapple. Garnish with almond slices, chopped cherries, chopped dry fruits.
Keep refrigerated for 2 to 4 hours. Serve chilled.
