Shanghai Style Chicken Stir-Fry – Chinese Style Recipe
Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
600g Chicken Thigh Fillets (cut into small bite-size pieces)
20g Ginger (finely chopped)
4 Spring Onions (finely chopped)
4 Cloves Garlic (finely chopped)
2 Red Spicy Chillies Peppers (thinly sliced)
1½ Tsp Chinese 5 Spice
2 Tbsp Shaoxing Rice Wine
1½ Tbsp Dark Soy Sauce
1½ Tbsp Brown Sugar
Method:
1. Heat 2 Tbsp oil in the wok over high heat
2. Add chicken and stir-fry for 5 minutes
3. Add ginger, the white part of the spring onions, Chinese 5 spice, garlic and half of the chillies, stir-fry for 3 minutes
4. Add the rice wine, soy sauce, brown sugar and 50ml of water, turn heat to medium and cook for 8 minutes – stir regularly
5. Turn heat to high, stir and ensure an even coating
6. Transfer into a dish, scatter with the green part of the spring onions and the remaining chillies and enjoy
