INGREDIENTS (serves 3-4)
6-8 chicken thighs – bone in
cider vinegar
olive oil
BBQ Rub (We use Greedy Pig BBQ Rub)
2 cloves garlic – finelay sliced
6 teaspoons margarine
½ cup chicken stock
BBQ sauce
Step #1 – Place chicken in a bowl. Add a splash of olive oil & vinegar. Mix in well. Coat chicken with BBQ Rub. Leave in fridge for 1 hour.
Step #2 – Heat oven to 275° / 140°C. Place chicken in a roasting pan skin side up & cook for 30 minutes.
Step #3 – Add margarine, garlic & stock to the pan. Turn chicken over, skin side down. Cover with foil & cook for 30 minutes.
Step #4 – Remove the foil. Turn chicken over, skin side up. Cook for 20 minutes.
Step #5 – Turn oven up to 400°F / 200°C. Coat the chicken with
BBQ sauce & cook skin side up for 15 minutes. Watch it doesn’t burn.
Step #6 – Coat with more BBQ sauce & serve with fresh parsley
(optional).
