High Protein Velvety Egg Sandwich! 324 cals per sandwich – 26g protein / 31g carbs / 7g fat
A flawless sandwich for meal prepping and a fresh method for relishing eggs with toast that’s so delightful using basic ingredients.
To prepare the egg mix:
– Start by boiling your eggs (I used 6 eggs) for 8 minutes, remove the shell and extract 2 yolks and deposit them in a bowl
• 2 full eggs + 4 egg whites
• 2 tablespoons of low-fat cream cheese (I picked light Philadelphia)
• 1/2 teaspoon of salt and pepper
• 1/2 teaspoon of onion powder
• 1/2 teaspoon of paprika
• Diced green onion / scallion
– Whisk until smooth
– Dice all the egg whites into small bits
– Include them in the bowl and blend until combined
To assemble:
• 2 slices of wholegrain/wholemeal bread (+ 2 extra for topping)
• Layer of lettuce
• The egg mixture
• Red pepper flakes & parsley
